One of the best fish pies I’ve ever had was served by my dear friend, the cookery programme producer Pat Llewellyn, when I first visited her house for dinner. Pat, who passed away in 2017, was the force behind Two Fat Ladies, The Naked Chef 2020欧洲杯足球即时比分and Ramsay’s Kitchen Nightmares. I loved the confidence she had, to serve such a seemingly simple dish, nothing fancy, but brilliant and delicious – everyone wanted seconds and thirds.
2020欧洲杯足球即时比分The beauty of fish pie is that you can use any combination of chunky fish you like. I’ve put cod, haddock and prawns in mine, but you could use salmon, hake – even monkfish or lobster tails, for a more luxurious dish.
You can make a cottage pie or a shepherd’s pie with pre-bought mince, but also with leftover roast beef or lamb, like my mum did when I was a child, which I loved. Twice-cooked beef, with a little tomato purée and lard, makes for an even more unctuous pie. They are a great way to use things up and waste less.
2020欧洲杯足球即时比分My steak and kidney pie is boozy, with stout or Guinness (I tend to use flavoursome chuck or braising steak). A full meal in itself, you don’t need to worry about anything else, except perhaps some seasonal greens. Kidney has a strong flavour, and I used to hate it as a child – but as I’ve got older I’ve grown to like the rich gaminess of it.
